I would like to include the content in the column mappings (a.k.a. the form fields) in the response email that the user receives. How do I do this?

In the "Email Response to Visitor" section, click the "View Column Mapping" link underneath the body text area. This will show a listing to the right of all the portal column values (fields). Use the exact name listed with the %% on either side. Insert this into the Subject and/or body of the email.
ie %%FirstName%%, Thank you for your response! I show your address as follows: %%Address1%% %%Address2%% %%City%%, %%State%% %%Zip%% etc....
